Flor del Delta
Between the cities of Valencia and Barcelona lies the Ebro River Delta Natural Park, the second most important wetland in the Mediterranean, where salt extraction dates back to the 14th century. Infosa, owner of the salt marsh located within this protected area since 1946, is the only marine salt marsh in Catalonia.
Its fleur de sal, named Flor del Delta, the result of a totally natural process where the only two forces involved in the are sun and wind, harvested strictly by hand between June and September, does not undergo any industrial process: thus a product rich in flavor is obtained, both in its pure form and in versions enriched with herbs, spices or pepper. A product of the highest quality chosen by some of the most renowned chefs, such as Joan Roca, chef of the 3 Michelin-starred restaurant “”El Celler”” de Can Roca, to create, in a perfect combination that comes from the choice of carefully selected raw materials, unique dishes.
