Prosciutto del contadino – Farmer’s ham – 7,5/8,5 kg boneless

Description:

This ham is made from heavy pigs of Italian origin. Production involves an initial cooling process and the ham is then trimmed to give the prosciutto its typical shape. It is then briefly salted and rested for a period of around three months.
Once cured, the hams are coated in a layer of pork fat to prevent fouling of the exterior part and to ensure that the hams dry out properly.
