Tuscan ham PDO

Description:

Tuscan ham PDO, made from heavy pigs of Italian origin, requires the legs to be “dry” salted (salt, pepper and herbs) and once they have been washed, dried and coated with a layer of flour, salt, pepper and pig fat, they are stored in a well ventilated space to be aged properly (10-12 months).
