Anchovy fillets from the Cantabrian Sea come from anchovies that are special in size, flesh, aroma and texture of the meat. The anchovies caught in the best period, from March to the beginning of June, are processed entirely by hand, according to a method that respects the dictates of tradition: they are deboned, washed in water and salt, dried and finally preserved under sea salt in the typical round tins. Anchovy fillets are obtained by filleting anchovies ripened in salt and preserved in olive oil.
Linda Playa was founded in 1960 and is dedicated exclusively to the production and marketing of salted anchovies. It was the first company in Cantabria to comply with European regulations since the year 1994/95. It is currently one of the leading companies in the industry both nationally and internationally, working mainly in the Italian market.
