Pink cooked salame can be considered in some respects the forefather of mortadella; it is made from the lean part of the shoulder, with no nerves, from coarsely chopped prosciutto meat and from mortadella mix, all processed and cooked in a similar way to mortadella. It has a distinctive spicy and pleasant flavour.
