Cotechino

Description:

Vecchio Varzi® “Cotechino” is made exclusively from the meat of Italian pigs, and the mixture is coarsely minced and flavoured with spices, in the age-old tradition of Varzi cured meat producers.
The mix is very similar in content to that of Varzi salame, with the addition of finely chopped pork rind, giving cotechino its distinctive musty and slightly sticky consistency, typical of cooked salami made from a high-quality meat mixture. The cotechino must be cooked for at least two hours before it can be consumed.
