Salami di Varzi D.O.P.

Vecchio Varzi has played a major role in the tradition of cured meats in the area of Pavia since 1974: Varzi PDO salame and its other cured meats are renowned for their artisan production, the selection of the best cuts from pigs reared in Piedmont, Lombardy and Emilia Romagna, and for the care taken for generations by the “norcini”, or pork butchers, especially during the curing stage, retaining the traditional flavour in every slice.
