Description:

Salami di Varzi PDO are produced in accordance with specific standards set by the Protection Consortium. The greatest care and attention is given to every stage of the production and curing process. These salami demonstrate a true commitment to quality, based on the decision to use a mixture made predominantly from noble cuts such as pork leg, one of the choicest
parts, normally used for prosciutto. The difference between them lies in the weight and curing time: from a weight of 350 g and a curing time of at least 30 days to a weight of 900 g and a curing time of minimum 60 days.
