Description:

Soprassata is a typical cooked product, also known as Capocchia. The pig’s tongue, rind and the meat from its head
are used to produce this sausage. Once boiled for 4/5 hours, it is seasoned with salt, pepper, spices, lemon, garlic and
parsley; it is then all mixed together and put into fibrous casings covered in jute fabric. Once cooled in a blast chiller, this sausage can be eaten at room temperature over the next few days.
